Sri Lankan Roasted Curry Powder (Badapu Thunapaha)

Roasted curry powder is one of the essentials in a Sri Lankan kitchen. Most of the recipes require roasted curry powder. You will love the aroma of this curry powder, even the Sri Lankan dishes cooked using homemade roasted curry powder are aromatic and delicious.

Ingredients:

  • 100g Cumin seeds
  • 50g fennel seeds
  • 50g Coriander seeds
  • 2 tbsp  fenugreek seeds
  • 1 tsp cardamom (about 6 nos of cardamom)
  • 1 tsp cloves
  • 2-4 sprigs curry leaves
  • 2 inch piece cinnamon

 

Method:

  • First wash all the ingredients separately, drain water .
  • Leave on some paper towels & allow to dry.
  • Remove skin of the cardamom & use the seeds.
  • Heat a pan & make curry leaves to dry.
  • Then roast other all ingredients separately until they are golden brown and aromatic. Make sure not to burn. Use low heat to roast and stir while roasting.
  • Grind all ingredients to a fine powder using a grinder.
  • Sieve them to get the fine powder & grind the remaining again.
  • Homemade roasted curry powder is ready.
  • Store in an airtight bottle.
