Cajun chicken pasta is spicy, aromatic, and delicious. Made with a combination of noodles, chicken, vegetables and spices, it resembles a truly Cajun style dish and lives up to its name.
Ingredients:
- 120g spaghetti noodles, cooked 2 pcs.
- boneless chicken breast cut in strips
- 2 tbsp butter
- 1 small red and green bell pepper, julienne
- 1/2 cup bacon or ham, diced
- 1/2 cup button mushrooms
- 1 cup crushed tomatoes
- 1/4 cup green onions, chopped
- 250 ml. all purpose cream
- 1/4 cup grated cheddar cheese
- salt and pepper to taste
For Cajun Marinade:
- 2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp cayenne powder
- salt and pepper
Method:
- Cook pasta noodles in boiling water according to package directions. Drain and set aside.
- Marinate chicken with garlic powder, paprika, cayenne powder, salt and pepper. Mix well and let sit for at least 20 – 30 minutes.
- Melt butter in a pan. Pan fry bacon and chicken strips over medium-low heat until light brown on edges. Add in red and green bell peppers, stir and fry for 1 minute.
- Add in mushrooms and green onions. Stir and fry for a few minutes.
- Pour in and stir crushed tomatoes and bring to a boil over medium-low heat. Pour in all purpose cream and season with salt and pepper. Stir together until well incorporated.
- Add in and toss the cooked pasta. Mix, until all, is well blended. Turn off the heat.
- Serve on a platter with grated cheddar cheese. Garnish with chopped parsley.
