  • 1 teaspoon salt

For the Rice

  • 4 cups basmati rice
  • 6 cups water
  • 2 tablespoons ghee or butter
  • 2 tablespoons vegetable oil
  • 2 bay leaves
  • 4 cardamom pods
  • 6 cloves
  • 1 cinnamon stick
  • 1 star anise (optional)
  • Salt to taste

For the Biryani Gravy

  • 2 tablespoons ghee
  • 2 medium onions, thinly sliced
  • 2 green chilies, slit
  • 2 tomatoes, chopped
  • 2 sprigs curry leaves
  • 1 pandan (rampe) leaf
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 cup thick coconut milk
  • ½ cup water
  • ½ cup chopped mint leaves
  • ½ cup chopped coriander leaves

Garnishing

  • 2 boiled eggs, halved
  • ½ cup fried onions
  • ¼ cup roasted cashew nuts
  • 2 tablespoons raisins
  • Chopped coriander leaves
  • Chopped mint leaves

Step-by-Step Instructions

Step 1 – Marinate the Chicken for Sri Lankan Style Biryani

In a large bowl, combine the chicken with:

  • Yogurt
  • Ginger paste
  • Garlic paste
  • Roasted curry powder
  • Chili powder
  • Turmeric
  • Black pepper
  • Salt
  • Lime juice

Mix thoroughly.

Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.


Step 2 – Cook the Rice

Wash the basmati rice until the water runs clear.

Bring water to a boil and add:

  • Bay leaves
  • Cardamom
  • Cloves
  • Cinnamon
  • Star anise
  • Salt

Add the rice and cook until it is about 70–80% cooked.

Drain immediately and set aside.

Step 4 – Cook the Chicken

Pour in the coconut milk and water.

Simmer until the chicken is tender and the gravy thickens slightly.

Stir in the chopped mint and coriander leaves.


Step 5 – Layer the Biryani

Reduce the heat to low.

Spread half of the partially cooked rice over the chicken.

Sprinkle:

  • Fried onions
  • Cashew nuts
  • Raisins
  • Mint leaves
  • Coriander leaves

Add the remaining rice.

Top with the rest of the garnishes.


Step 6 – Steam (Dum Cooking)

Cover the pot tightly with a lid.

Cook over very low heat for 20–25 minutes.

This allows the rice to absorb the flavors of the chicken and spices.


Step 7 – Rest the Biryani

Turn off the heat.

Allow the biryani to rest for 10 minutes before opening the lid.

Gently fluff the rice with a fork.
