- 250 g noodles
- 2 tablespoons cooking oil
- 2 eggs
- 1 medium onion, sliced
- 2–3 cloves garlic, finely chopped
- 1 small carrot, julienned
- ½ cup cabbage, thinly sliced
- ½ cup leeks or spring onions, chopped
- ½ teaspoon black pepper
- Salt to taste
For the Sauce
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon chili sauce
- 1 teaspoon sesame oil
- 1 teaspoon vinegar or lime juice
Optional Ingredients
- ½ teaspoon chili flakes
- ½ teaspoon grated ginger
- Sliced green chilies
- Bean sprouts
- A small amount of chopped coriander
Step-by-Step Instructions
Step 1: Prepare the Noodles
Cook the noodles according to the package instructions until they are just tender. Avoid overcooking them, as they will be stir-fried later.
Drain the noodles and rinse briefly with cold water. Toss them with a small amount of oil to prevent them from sticking together.
Step 2: Prepare the Prawns
Clean and devein the prawns. Pat them dry with a paper towel.
Season lightly with a little salt and black pepper.
Step 3: Cook the Prawns
Heat a large wok or frying pan over medium-high heat and add a little cooking oil.
Add the prawns and stir-fry for about 2–3 minutes on each side, or until they turn pink and are cooked through. Remove them from the wok and set aside.
Step 4: Cook the Eggs
Add a little more oil to the same wok.
Beat the eggs and pour them into the wok. Stir gently until the eggs are scrambled and cooked. Remove them and keep aside.
Step 5: Stir-Fry the Vegetables
Add the remaining oil to the wok and the chopped garlic and onion and stir-fry for about 30 seconds.
Add the carrot, cabbage, and leeks. Stir-fry over high heat for 2–3 minutes. Keep the vegetables slightly crisp rather than overcooking them.
Step 6: Add the Noodles
Add the cooked noodles to the wok.
Pour in the soy sauce, oyster sauce, chili sauce, sesame oil, and vinegar or lime juice.
Toss everything together carefully so the noodles are evenly coated with the sauce.
Step 7: Add the Prawns and Egg
Return the cooked prawns and scrambled egg to the wok.
Add black pepper and chili flakes if desired. Stir-fry everything together for another 1–2 minutes.
Step 8: Final Seasoning
Taste the noodles and adjust the salt and sauces according to your preference.
Add chopped spring onions or coriander just before removing from the heat.
Serve hot and enjoy your homemade Prawn Fried Noodles.
