Step-by-Step Instructions
Step 1 – Prepare the Mangoes
Wash, peel, and dice the mangoes into bite-sized pieces.
If using very ripe mangoes, handle them gently to keep the pieces intact.
Step 2 – Temper the Spices
Heat the oil in a saucepan over medium heat.
Add:
- Mustard seeds
- Cinnamon stick
- Cloves
- Curry leaves

- Sliced onions
- Garlic
- Ginger
- Green chilies
