Chicken Noodle Soup is made with shredded chicken, a hearty broth, and a variety of vegetables. As many of you already know, chicken soup is a terrific snack or comfort food.
Ingredients
- 2 pieces medium chicken breasts, boiled and shredded
- 1 small carrot, julienned
- 2 small potatoes, julienned
- 1 small onion, chopped
- 3 cloves garlic minced
- 1/4 cup celery chopped
- 2 wieners, diced
- 2 tbsp butter
- 1 cup pasta or elbow macaroni noodles
- 3 cups water
- 1 cup chicken stock
- 1/2 milk
- salt and pepper to taste
Method:
- Boil water and place in chicken. Simmer until tender and shred in strips. Keep 1 cup of broth and set aside.
- Melt butter in a pan. Saute onion and garlic until fragrant. Add in shredded chicken and saute until light brown.
- Season with salt and pepper. Pour in water and stock. Bring to a boil.
- Add in the carrots, potatoes, wieners, celery, cabbage and noodles. Simmer for 15 minutes or until vegetables tender. Pour in milk; salt and pepper to taste.
