
Egg Puff is a popular savory pastry made with flaky puff pastry and a flavorful spiced egg filling. It is crispy and golden on the outside while being soft, savory, and aromatic inside. Step-by-Step to Cook Egg Puff
Step 1: Boil the Eggs
Place the eggs in a saucepan, cover them with water, and boil for about 9–12 minutes. Cool the eggs, remove the shells, and cut each egg in half.
Step 2: Prepare the Spicy Onion Filling
Heat oil in a pan over medium heat. Add the sliced onion and curry leaves. Fry until the onion becomes soft and lightly golden.
Step 3: Add the Spices
Add the green chilies, curry powder, chili powder, turmeric, black pepper, and salt. Stir well and cook for another 1–2 minutes until fragrant.
Step 4: Prepare the Puff Pastry
Thaw the puff pastry according to the package instructions. Lightly dust your work surface with flour and cut the pastry into suitable squares or rectangles.
Step 5: Assemble the Egg Puffs
Place a spoonful of the spicy onion mixture in the center of each pastry piece. Place half of a boiled egg on top. Fold the pastry around the filling and gently press the edges together.
Step 6: Apply the Egg Wash
Place the prepared puffs on a baking tray lined with baking paper. Brush the tops with beaten egg to give them a beautiful golden finish.
Step 7: Bake
Preheat the oven to 200°C (400°F). Bake the Egg Puffs for approximately 18–25 minutes, or until the pastry is puffed and golden brown.
Step 8: Serve
Remove from the oven and allow them to cool for a few minutes. Serve warm with tea, coffee, or your favorite dipping sauce.
