
What is Pani Pol?
Pani Pol (පැණි පොල්) is a sweet and aromatic Sri Lankan coconut filling made with freshly grated coconut, kithul treacle or jaggery, and warm spices such as cardamom and cinnamon. The name Pani Pol literally refers to the combination of treacle (pani) and coconut (pol).
This delicious sweet coconut mixture is commonly used as a filling for pancakes (sweet pancakes) and can also be enjoyed as a filling for traditional Sri Lankan snacks and desserts. It is particularly popular during the Sinhala and Tamil New Year (Aluth Avurudda) and family celebrations.

Ingredients

- 2 cups freshly grated coconut
- ¾ cup kithul treacle
- 2 tablespoons brown sugar or white sugar
- ½ teaspoon cardamom powder
- 1 small cinnamon stick

- ½ teaspoon fennel seeds
- 1 tablespoon chopped cashew nuts
- 1 tablespoon raisins
- ½ teaspoon vanilla essence
Step-by-Step Instructions
Step 1 – Prepare the Coconut
Use freshly grated coconut for the best flavor.
If the coconut pieces are very large, chop or grate them more finely.
Set aside.
Step 2 – Heat the Treacle
Place a heavy-bottomed saucepan over low to medium heat.
Add the kithul treacle and brown sugar.
Heat gently until the sugar dissolves and the mixture begins to bubble lightly.
Avoid boiling the treacle for too long, as it can become excessively thick.
Step 3 – Add the Spices
Add:
- Cinnamon stick
- Cardamom powder
- Cloves, if using
- Fennel seeds, if using
- A pinch of salt
Stir well and allow the spices to infuse into the treacle for approximately 1–2 minutes.
Step 4 – Add the Coconut
Add the freshly grated coconut to the warm treacle mixture.
Stir thoroughly until all the coconut is coated with the treacle.
Step 5 – Cook the Pani Pol
Continue cooking over low heat for approximately 5–8 minutes.
Stir continuously to prevent the coconut from sticking to the bottom of the pan.
The mixture should become:
- Moist
- Sticky
- Aromatic
- Slightly thick
Do not cook until completely dry.
Step 6 – Add Optional Ingredients
If desired, add:
- Chopped cashew nuts
- Raisins
- Vanilla essence
Mix well and cook for another minute.
Step 7 – Remove from Heat
Turn off the heat once the coconut mixture reaches the desired consistency.
Remove the cinnamon stick and cloves.
Allow it to cool completely before using it as a filling.
Step 8 – Use as a Filling
Pani Pol can be used as a filling for traditional Sri Lankan sweet pancakes.
Place approximately 1–2 tablespoons of the coconut mixture in the center of a pancake.
Fold or roll the pancake and serve.
