Coconut Rotti(Pol Rotti)

Serve with curries and sambals, Rotis is a popular breakfast dish in Sri Lanka. It is similar to the Indian flatbreads.

Ingredients – :
2 cups flour
1 cup fresh coconut
Salt to taste
3/4 cup of coconut water
Butter

Method
Using a mixing bowl mix the flour, coconut and salt. Add just enough coconut water to make a soft dough. Knead the dough until it forms a ball, and not sticking to the bowl. Set aside the dough to rest for about more than one hour. Use your hands to shape the dough into balls, the size of a golf ball. Flattened them to for a circle the size of a saucer. Heat up a griddle and cook the flattened dough, lightly greased with the butter. Best to serve hot.
