Chicken Noodle Soup

Chicken Noodle Soup is made with shredded chicken, a hearty broth, and a variety of vegetables. As many of you already know, chicken soup is a terrific snack or comfort food.

Ingredients

  • 2 pieces medium chicken breasts, boiled and shredded
  • 1 small carrot, julienned
  • 2 small potatoes, julienned
  • 1 small onion, chopped
  • 3 cloves garlic minced
  • 1/4 cup celery chopped
  • 2 wieners, diced
  • 2 tbsp butter
  • 1 cup pasta or elbow macaroni noodles
  • 3 cups water
  • 1 cup chicken stock
  • 1/2 milk
  • salt and pepper to taste

 

Method:

  • Boil water and place in chicken. Simmer until tender and shred in strips. Keep 1 cup of broth and set aside.
  • Melt butter in a pan. Saute onion and garlic until fragrant. Add in shredded chicken and saute until light brown.
  • Season with salt and pepper. Pour in water and stock. Bring to a boil.
  • Add in the carrots, potatoes, wieners, celery, cabbage and noodles. Simmer for 15 minutes or until vegetables tender. Pour in milk; salt and pepper to taste.
